exactly Faten..lol@ cayzeh..so long since we had that.after you fill the dough with the stuffing you fry it in hot oil,drain and sprinkle with powdered sugar.
As a Palestinian who goes back & forth to Jordan AND make a lot of Arabic sweets here, I have never seen or heard of this, looks so yummy though, So it looks like its basically white “crazey” in thin dough, then does it get fried or what exactly? i want to try this. :)

thanks george for this nice video…i like to see how porfessional do their stuff! i remember my grandmother used to make this dough and i could never understand how she gets it so think without having holes in it!! it must take a lot of practice. we used to have it for breakfast too!
Rehab its a traditional palestinian sweet,you can make it at home its easy.now here coz they are professionals they have their own dough,but you can use frozen dough if you have the sambousa one in usa,if not maybe phyllo or puff pastry will do just cut in wide stripes add the filling and roll .the filling is semolina(smeed we use in kaaek and maamoul) it is mixed with water and heated till thick,you can add little sugar if you want.then when cool u can spoon in or cut it like this and roll it inside the dough in a triangle shape.after frying in hot oil sprinkle with powdered sugar.
