Vegetable Soup This is not a vegetarian dish just because it contains vegetables in it. It is a recipe for vegetable soup with chicken broth, or any meat broth of your choice. Ingredients Chicken or meat broth Onions Carrots Artichoke Spinach With this recipe, you may buy the broth in cans, use cubes or make your own by boiling chicken or meat with the bones in, adding onions, spices such as cardamom and adding aromatic herbs such as bay leaf. This will improve the taste of the broth and make it tasty. Directions: - Cook the broth - Add cut carrots - Add fresh, frozen or canned artichoke hearts or bottoms - When all the vegetables are cooked, split into halves - Blend ½ of the soup in the blender to a fine finish, adding fresh, frozen or canned spinach - Add the blended half of the soup with the chunky half and mix well, cook for another five minutes. Pour in a serving dish and serve hot. - You may squeeze fresh lemon and garnish with cut parsley at serving time

When you blend half of the soup, it makes it creamy and delicious, also it depends on what type of vegetables you are using. startchy veggies tend to give it a more creamy texture, such as Potatoes and Corn. i hope it works out for you when you prepare it.
