Ingredients: 1 large Arabic pita bread 1 whole chicken cut up into four pieces. You may use only breast meat. 1 small onion or 100g cut cubes. You may add some MAGGI cubes if you like. 1 tablespoon cardamom 1 cup cooked white rice. preferably Egyptian rice. For the yogurt sauce: 2 cups yogurt-You may use low fat yogurt. 4 minced garlic cloves Optional for garnish: toasted pine seeds, and/or almonds 1 tablespoon parsley Preparation: Toast the Arabic bread, cut into small pieces, toasted. place in a large serving deep dish. Seal chicken with little oil from all sides. Add water, bring to boil and skim froth as it appears, add onion, salt and cardamom. Cook for 50 minutes, or until chicken is falling off of the bones. Remove meat pieces from bones and set aside. Reserve the chicken stock. To arrange the dish: Add lemon juice and minced garlic to the bread. Pour some of the chicken stock over the toasted bread. Spoon the rice over the bread, if needed, add more broth. combine all ingredients for the yogurt and pour over the rice, then place the chicken meat pieces over the yogurt. Garnish with toasted nuts and sprinkle parsley over. Serve immediately.
Faten, Thanks, some people also do not put the laban on top, they just leave it on the side and they can add it later. hope your mom likes it too.

I really have to be honest, yogurt on top of the rice, this is the first time I have seen that. But that may be because I have only been to Palestine for 10 days and have been to Jordan a few months at a time.
But I cook just like my mom who was raised in Palestine. I am sure if she see this she will know it but I don’t. Fatteh Hummus, Tomato, I have heard of, but have not tried ( picky family).
This is one of the things I love about our culture, the cooking and diversity within it.

Faten…NO, This is not Mansaf recipe!!! like you siad, with mansaf the yogurt or jameed is COOKED…this is a basic Fatteh recipe, you may make it with chicken or meat broth and use chicken of meat depending on what type of Fatteh you are making….again, you surprise me by not knowing this dish!! it a very popular dish in Jordan, Palesting, Syria, Lebanon and even Egypt!!! what part of the middle east are you from?? there are many types of fatteh recipes, such as Hummos fatteh, Makdoos fatteh, and so on…hundreds if not thousands online fatteh recipes too…i suggest that you google it in arabic and in english and you will be surprised of how many there are out there!!!

It looks like “Mansef” but as Palestinians we add the Yogurt or Jamed to the Broth and let it cook. I have to try adding Lemon to the Bread next time though, I never saw that done before. :) Looks Yummy. Your making the ikbisers Hungry Summer

Nidal, Thank you…when cooking i try to find the easiest and fastest way to do things, so cutting the bread with scissor makes more sense than by hand….i use it to cut uniform cuts of meat and chicken breast too. try it.
