Stuffed Grape Leaves -ورق عنب و كوسا محشي بزيت الزيتون - يلنجي

ورق عنب و كوسا محشي بزيت الزيتون Stuffed Grape leaves and Zucchinis. A popular dish in the Middle East. Time consuming to prepare but super delicious dish. Ingredients: -1 Pound Grape Leaves -10 pieces of Zucchinis - 1 ½ cup short grain Rice - 1 or 2 medium Onions, diced - 3 medium Tomatoes, diced - ½ a cup of chopped Parsley - Salt, Black Pepper and Allspice to taste - Half a cup of Olive Oil - four large sliced potatoes for laying in the bottom of the cooking pot For cooking you need: - ¾ cup Olive Oil - ¾ cup lemon juice - 3-4 diced tomatoes -Salt to taste -Wash all your vegetables. Make the stuffing by adding the washed rice, diced tomatoes, onions and chopped parsley, season, add olive oil and mix well. - Roll up your grape leaves with the stuffing and set aside. - Hollow your zucchinis and stuff with the rice stuffing. - Lay the sliced potatoes in the bottom of your pot, season and mix well with olive oil. - Arrange your zucchinis and grape leaves inside the pot. - Add the diced tomatoes on top, add salt and olive oil. Cover with a plate to prevent boiling over. - when it boils, lower the heat and simmer on low for about two hours, or until all the liquid is absorbed. - Half way through the cooking, add the lemon juice to it. - When cooking is done, invert into a platter and arrange nicely. - Make sure you plate the potatoes that are in the bottom, they are so succulent and full of lemon flavor. Plain delicious!! - You may serve this dish hot or at room temperature with plain yogurt on the side or extra lemon juice.

  • I never ate spicy food , i am sharing with my friends a cook who is cooking only arabic food for us not spicy at all , but in some cases when he is absent we go out and eat fast or junk food

    I study abroad so i see this type of food only once a year when i go back to Jordan on vaccations and my mother starts making for me her tasty food .

  • cool video, but what really surprised me…....George can cook, and he’s a guy! And rolling these are extemley hard. I’m not allowed to lif dewali (stuff grape leaves). I tried rolling some once at my in laws and my mother n’ law gave me a funny look, so i tried it another time at my moms house, she gave me the same funny look.:( but I can make a killer pot of makloube =)

    I make it the exact same way, but add meat sometimes and place the cusa in the bottom of the pot. BUt hey, i am going to give it a try this way.
    HMMMM I think I will do this tommorow♥

  • Triplem, you gotta believe me when i say that it did taste so so so good!! a lot better than it looked, and it looked great!!
    as for variations in recipes, it is common, most people use the basic ingredients with slight differences…the results is all tha matters!!! thanks for your comment.

    Well..I think its different than the way we cook it in Egypt. I don’t know the differences but the way you prepare the rice looks just different than ours, still the basics are the same.

  • George, thanks for your recipe!!! Actually as Solid Snake stated, this is the Yalanji dish, but again, i cook it my own way, i use the basic recipe with my own personal touch. you should try it sometime…i find it better than the one with meat, ribs or even chickpeas. thanks for your comment too.

  • Thanks for the video, it seems great! I can taste it form here! I should try it out, never had this dish. I usually stuff it with rice, meat and spices then add some tomatoes and lamb rib meat at the bottom and it’s just great. There is also yalangi which is close to what u did, but your dish has more stuff, in addition to the one stuffed with chickpeas, which I don’t really like.
